Our wonderful neighbour sent us a huge wheel of ripe jackfruit this morning, they own a fruit farm up in Tagaytay, whenever they harvested seasonal fruit we always get some, so lucky!
I love Jackfruit (Nangka in Indonesian, Langka in Tagalog), I always wanted to bake with jackfruit from scratch for a while now and it’s finally happening, introducing our newest cupcake flavour, Jackfruit cupcakes with buttercream frosting and chopped fresh jackfruit sprinkles.
These particular cupcakes were very fragrant, it has a distinctive jackfruit aroma and taste absolutely delicious. The flesh of the jackfruit is normally starchy and fibrous but it become soft and sweeter after being baked, LOVED it! I can see myself polishing the whole batch haha 🙂
Today we are celebrating a very special person birthday, she’s the first Indonesian friend I’ve met 2 years ago when we arrived in Manila. I’ve baked Red wine chocolate cupcake with chocolate frosting especially for Amanda, as per her request. A bunch of us took her out to The Peninsula for lunch, it’s a great excuse to catch up with all these busy Mums prior our school pick-up routine.
Happy birthday Amanda, here’s to many more years and celebrations to come!
Hello everyone, good morning from home sweet home Manila!
Spring break is officially over for our family, as you can see I’m back in my baking studio as per Little Miss request, she has several sports competition and a fashion show lining up the next couple of weeks so I’m gearing towards healthy ingredients but super tasty baked goodies. Must admit I do enjoy the peace and quiet being home alone, also nothing beat my morning coffee with freshly baked Orange cupcake and cream cheese frosting, wonderful start of the day ❤
Wishing you eggs-tra special Easter Sunday filled with lots of love, hip-pity hop-pity fun and laughter.
It’s my better half special day and I’ve baked up a storm!
Made pull apart Oreo cupcakes cake of number 46 and Ironman logo on it (since my husband did the Ironman Melbourne with flying colours we nicknamed him Ironmig), 30 mini vanilla cupcakes with chocolate frosting and red M&M’s (M stands for Mi Amor, Miguel, Manila, Melbourne, ironMan), 5 layers vanilla cake with dulce de leche filling and chocolate frosting, 2 rectangular Leche Flan and a big jar of Madeleines. Completed all in less than 24 hours, definitely sleep deprived but very happy with the results.
We celebrated his birthday in the morning just the 3 of us with a cupcake breakfast and piano rendition of the Happy Birthday song by Little Miss (a family tradition) then I’ve ordered Philippino food for his office where he had lunch celebration with his staff (with the M’s cupcakes) and last but not least we did Argentinian BBQ dinner with our close friends (one of the highlight of the evening was watching his Ironman Melbourne journey on a big screen, awesomeness!). All baked goods were big hits, nothing left at the end of the party, one happy baker here 🙂
Feliz cumpleaños mi amor, te quiero mucho ❤
