Despedida
It is that time of the year again, as the end of the school year drawing closer a few of my daughter batch Parents already told me that they’re leaving Manila for good in Summer. Automatically I checked my schedule then pick up a day that a few of us could gather for lunch and started cooking. I believe in proper send off, I remember vividly all of the send off party that my friends did for me in our previous postings, one of the best memories of the place that we used to call home.
For this particular despedida lunch I made Indonesian Oxtail soup with Emping Belinjo ( Indonesian crisps) with spicy home made chilli sauce on the side, Roasted Chicken with Balinese sambal matah, roasted potatoes, steamed rice and chopped cucumber. my friend Khin brought delicious Thai Mango salad which is perfect compliment for the menu, unfortunately I forgot to take photo of my table spread! Nevertheless I did remember to take picture of the desserts, I baked chocolate cake with chocolate drip, vanilla cupcakes with buttercream frosting and strawberry dipped in chocolate.

The last few weekends I was baking back to back Matilda the musical theme cupcakes for my friend Terrence, such a nice break from all the holidays baking! The first week was vanilla cupcake with buttercream frosting and edible print Matilda topper. The week after was pull apart cupcakes cake based on the musical poster, so much fun!



Special Day
I love birthdays.
In my household, planning a birthday party is almost as exciting as the party itself, we all chimed in with theme and ideas. This year, for her 12th birthday, my daughter asked to have a few school friend to celebrate her special day with merienda at her favourite teppanyaki restaurant (Ogetsu Hime in SM Aura, the teppanyaki chef are great entertainer too!) followed by watching movie (Justice League) at Director’s Club. As for her birthday cupcakes she requested vanilla cupcake with chocolate frosting and chocolate cupcake with vanilla buttercream, I was only allowed to put a dash of red on it (for good luck!).
Wishes granted.
Little Miss had a blast and so did we, mission accomplished.

My friend Pia asked me to bake birthday pull apart cupcakes cake for her Mum’s birthday celebration, she told me that her Mum favourite colour is RED and there will be a hundred people in the party. Respectively i did 2 large pull apart cupcakes cake in 2 flavours (1 vanilla and 1 chocolate, as requested) and since I LOVE the colour red I made sugar fondant flowers with different shades of red with few tiny bits of yellow to add brightness. Also instead of making hundreds of green leaves I covered the cupcakes cake in green buttercream frosting which saved me a lot of time, phew!
I’m very happy with the result, worth every single second out of the 12 hours long making it.

Such a sweet and caring girl, on her birthday she wished to spent it with the children in the Orphanage (that she visited a few times previously) with some cupcakes. I told her Mum that I will match her cupcakes order for free, she requested 70 pcs of cupcakes and I made 144 pcs.
Yes, correct … thats 12 dozens of cupcakes! Consists of 4 dozens Vanilla cupcakes, 4 dozens Oreo Cupcakes and 4 dozens Chocolate cupcakes. I spent over 18 hours of baking, decorating and packing them, it was pretty intense!

I dropped Olivia, Katie, Emily and the cupcakes off at 10am, they were supposed to leave at 2pm, but they are having such a wonderful time they asked to stay longer. They are only leaving at 5pm now. The kids at SOS Children’s Village were soooo excited to see all the cupcakes, they loved them. I took pizza there for them all at lunchtime, so they have had a lovely party. Thank you so so much for making the cupcakes and for generously donating half. You really are a truly special, thoughtful lady. Hope you have a wonderful weekend. xx
