Icebox Cookies

Also called refrigerator cookies (a type of cookie in which the dough is prepared, rolled into a log shape, and refrigerated until the dough is firm) is the secret to my last minute weekday baking. I always prepared the dough ahead of time, label it (FIFO system) and  keep plenty of them in the freezer. Whenever I need freshly baked cookies to fill my daughter snack bag I just sliced it and bake it in the oven.  She loves it when I mixed chocolate dough with vanilla dough, you get all kind of swirl pattern even a perfect letter C sometimes, isn’t it COOL?

It stands for Lions Gymnastics Club, my daughter’s school gymnastics team. We had social gathering after training session to celebrate the team members on their FOBISIA 2017 achievement yesterday.  I’ve made banana chocolate bundt cake, sugar cookies and chocolate cookies, ordered 100 pcs pork BBQ (my daughter favourite skewers food!) and we’ve got parents sending all kinds of food which the hungry gymnasts enjoyed immensely. So nice to see parents, kiddos and coaches were engaging in lovely chat in between munching yummy treats. Congratulations Team

It’s our family tradition to baked festive cookies for family and friends in December, the most waited time of the year. This time around the cookies even made it safe and sound to Vancouver, Canada! I’ve made 2 sizes of sugar cookies this year, the large ones were individually wrapped as hampers filling and the bite size ones were served in our annual christmas dinner party. I also baked oatmeal with chocolate chips and M&M’s cookies (Santa’s favourite) and festive pinwheel cookies (my daughter favourite). Nothing beat freshly baked cookies for the holiday.

Spooky Cookies

My daughter and her friend helped me decorating these cookies, it was a fun afternoon filled with laughter and the occasional cookie break (no pun intended). I’ve noticed that this year my daughter is really comfortable with piping the royal icing, she has steady hand for a 7 years old, I’m a proud Mama!

I did a quick walk down the lane on my mind and realized that last Halloween I was baking cupcakes and cookies in my kitchen in Shanghai, the year before that I baked halloween cookies in my Bangkok kitchen.  I am so looking forward to more halloween theme baked goodies here in my Manila kitchen, wish me luck.

Cupcake Cookies for Mateo

These were 25 butter cookies, Mateo’s Mom ordered cupcake shape cookies to bring to his school for his birthday, I think it’s a great idea!

PS. Suksema means Thank You in Balinese language, I am Balinese and she just went there for a holiday during Golden Week holiday, hence the word.

Cookies ~ Cupcakes

Found these cute cookie cutters in cupcake shape during my recent trip to Vancouver Island, Victoria, BC. It comes in 3 different sizes, such a great fun! My daughter saw me decorating the cookies and said, “Is it a cookie or a cupcake, Mami?”
